Turkey Meatballs with Cranberry Sauce

Ingredients:

2 Tablespoons Terra Delyssa® Extra Virgin Olive Oil

1 lb. Ground Turkey

1 Egg

1/4 cup Red Onion, finely diced

2 Garlic Cloves, minced

1/3 cup Breadcrumbs

1/3 cup Whole Milk

2 teaspoons Fresh Thyme Leaves

1 teaspoon Salt

1/2 teaspoon Ground Black Pepper

1 cup Chicken Broth

1 cup Whole Berry Cranberry Sauce

  

Directions:

  1. To a large mixing bowl add ground turkey, egg, onion, garlic, breadcrumbs, milk, thyme, salt, and black pepper. Mix with a fork or your hands until incorporated then roll into evenly sized meatballs.
  2. Heat a large skillet over medium-high heat then add Terra Delyssa® Extra Virgin Olive Oil and brown the meatballs on medium heat, turning them once for even browning.
  3. Add the broth and cranberry sauce to the meatballs and gently toss to coat. Simmer on low heat for another 5-8 minutes or until the meatballs are fully cooked through.
Garnish with fresh thyme leaves and serve with mashed potatoes, if desired.
