Fresh Spring Rolls

Ingredients:

4 Tablespoons Terra Delyssa® Organic Extra Virgin Olive Oil

2 teaspoons Chili Garlic Sauce

3 Tablespoons Lime Juice

1 teaspoon Salt

2 teaspoons Sugar

1/2 cup Fresh Basil Leaves

1/2 cup Fresh Cilantro

1/2 cup Fresh Mint Leaves

8 Spring Roll Wrapper

Extra Firm Tofu, cut into matchsticks

3 Large Carrots, cut into matchsticks

1 Seedless Cucumber, cut into matchsticks

1 cup Purple Cabbage, thinly shredded

4 Large Romaine Lettuce, cut in half

1 teaspoon Toasted Sesame Seeds, for garnish

  

Directions:

  1. To make the herb dipping sauce, add chili garlic sauce, lime juice, salt, sugar, 1 Tablespoon of finely chopped herbs (basil, mind and cilantro), and organic extra virgin olive oil to a bowl and mix to combine. Keep any leftover herbs for the spring roll filling.
  2. Add a bit of water to a large plate then dip the spring roll wrapper into the water for a few seconds until fully soaked.
  3. Lay the softened spring roll wrapper flat on your working surface then add a few strips of carrot, cucumber, shredded cabbage, firm tofu, fresh herbs and romaine lettuce to the center of the wrapper. Carefully fold 3 sides over the filling in the center then roll to seal. Repeat with the remaining wrapper and filling.
  4. Cut each spring roll in half, place onto a serving plate, garnish with toasted sesame seeds and serve with the herb dipping sauce.
