Ingredients:

  • ½ cup Terra Delyssa extra virgin olive oil1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 cup pumpkin purée
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda

Instructions:

  1. Preheat oven to 350°F. Line an 8x8-inch baking dish with parchment.
  2. In a large bowl, whisk olive oil, brown sugar, and granulated sugar until smooth.
  3. Whisk in egg, egg yolk, pumpkin purée, and vanilla.
  4.  In another bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt.
  5. Gently fold dry mixture into wet until just combined.
  6. Stir in chocolate chunks, reserving a few for the top. 
  7. Spread evenly into your dish, top with extra chocolate.
  8. Bake 35-40 minutes or until a toothpick comes out with moist crumbs (not wet batter).
