Garlic Shrimp noodles

A recipe for Easy Quick Garlic Shrimp Noodles with Lemon, Fresh Vegetables, and White Wine. Healthy, budget-friendly, and Delicious!

Ingredients
8 ounces of thin pasta noodles
1-pound raw shrimp peeled; tails removed
2 tablespoons Terra Delyssa extra-virgin olive oil or Terra Delyssa organic chili-infused olive oil
1 shallot peeled and diced
5 minced cloves garlic
1/2-1 teaspoon crushed red pepper flakes
1 teaspoon salt
1 teaspoon black pepper
24 ounces mixed vegetables
1/4 cup dry white wine
Zest and juice of 1 large or 2 small lemons
3 tablespoons Parmesan cheese
2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and the noodles until they are al dente, according to package directions. Reserve 1/4 cup of water noodles, drain the rest of the water, then mix with a little olive oil so that they do not stick. Put aside.
  2. Meanwhile, rinse the shrimp and dry them. Heat 1 tablespoon of olive oil in a pan over medium-high heat. Add the shallot and cook until fragrant, 2 minutes. Add the garlic and cook for an additional 1 minute. Add the shrimp, and then sprinkle with half the amount of red pepper, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Sauté, stirring to coat with garlic, just until cooked through, about 3 to 4 minutes. Transfer to a plate and set aside 
  3. Heat the remaining 1 tbsp olive oil on medium-high. Add the vegetables and the remaining 1/4 or 1/2 teaspoon red pepper, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Cook until the vegetables are hot and lightly sautéed, 4 to 5 minutes. Add the white wine and return the shrimp to the pan. Cook for 2 minutes, letting the wine reduce. Stir in the lemon zest and juice and remove from heat. 
  4. Add the noodles to the pan and mix. If the noodles are too dry, add some reserved noodles water. Serve hot, garnished with Parmesan and parsley.
